Labor Day Weekend

We had a great Labor Day weekend!  My Mom and Dad drove to visit from Arkansas.  We love it when they come to see us because we miss them so much!  We mostly just hung out and rented some movies, they played with Connor, and Mom and I went to Sam Moon. 
On Sunday we drove to Glenrose and looked at dinosaur tracks and that was pretty cool!  It’s quite a hike up the mountain to the top….whew!  Thank goodness the weather has cooled down the last few days and it was so nice outside.  Afterwards we ate at the Cracker Barrel for lunch.  I just love their gift shop and the food is so good too….it reminds me of fall home cooking 🙂
Then Monday they headed back home and I did some laundry and cleaned the house up.  We did our grocery shopping and then chilled at home all day with the windows open.  It was in the 60’s yesterday morning! CRAZY! 
And….back to the daily grind today……
I think I need to go back to the Doctor.  I don’t know what is going on with me lately.  My hormones are all over the place and I have hot flashes all the time.  That sounds strange doesn’t it?  I’m 30, but I feel so old.  My joints are tighter & I feel like an old woman these past few weeks.  It seems like no matter what I do exercise and diet wise I keep gaining weight???  The Doctor put me back on birth control, but I’m still bleeding when I’m not supposed to be….I’m just an emotional hormonal wreck right now & I don’t know what’s wrong 🙁  Maybe my body is still trying to get adjusted after pregnancy and breastfeeding for so long…but I figured at this point things would even out.  Anyone have any advice?

18 Months

Connor you turned 18 months old yesterday!  You are officially 1 1/2 years old now 🙂
You are the light of our lives, we love you so very much!  You continue to fill our hearts with so much love and joy that we never knew existed.  You love to share and you play friendly with others…you are just an all around great kid!  You make the silliest faces and make us laugh all the time.  Still a very picky eater, but we know it’s just a phase (hopefully!)  You love to give kisses and you think Daddy and I are the best ever….I know this will change some day so I’m enjoying it while it lasts. 
We are so thankful to God that he gave us your life.  We are so blessed to be your parents & we love you more and more each day!

Saturday Sharpie Scene

I am sure if you are on Twitter or Facebook you may have heard of Klout.

I love love LOVE Sharpies!  My Mom is visiting this weekend and she’s a teacher and her jaw dropped when she saw all the Sharpies I got for free!  All I had to do is sign up with Klout 🙂

Chicken Gyros & $50 Kodak Giveaway!

Chicken Gyros
“Yee-ro”

Tzatziki sauce:

1 cup plain Greek yogurt
1 regular cucumber, peeled and seeded
1 teaspoon minced garlic
1 teaspoon white wine vinegar
Salt and pepper
Squeeze of fresh lemon juice
Extra virgin olive oil

Shred the cucumber or chop in food processor. Wrap in a towel a squeeze to remove as much water as possible. Mix together the yogurt, shredded cucumber, garlic, white wine vinegar, salt and pepper to taste, and lemon juice. Drizzle lightly with olive oil. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
For the chicken:

2 teaspoons minced garlic
Juice of 1 lemon (2-3 Tablespoons)
2 teaspoons red wine vinegar
2 Tablespoons extra virgin olive oil
2 heaping Tablespoons plain Greek yogurt
1 Tablespoon dried oregano
Salt and pepper
1 1/4 lbs. boneless, skinless chicken breasts

To prepare the chicken, combine the garlic, lemon juice, red wine vinegar, olive oil, yogurt, oregano, and salt and pepper to taste in a medium bowl. Whisk together until mixed well. Add the chicken pieces to the bowl and mix well to coat. Cover and refrigerate for about 1 hour.

To assemble:
Pita bread (Heat pitas)
Cut chicken into strips. Top pita with chicken, tzatziki sauce, diced tomatoes and sliced onions.

Here are some cute cupcakes I made the other day for work.  They were delish, but I screwed up the icing a bit so I tried to cover it in sprinkles and pinwheels.

My Accent Vlog

Without further ado here is my “Accent Vlog”
This was BS (Before Starbucks) at around 6:30 this morning 😛

I’m linking up with a bunch of other gals on Twitter & from Jenna’s blog.  I don’t know that I have an accent, but this was embarrassing for me! Ha ha! 

Obviously I am reading the questions directly off of Jenna’s blog as I’m taping.  Also, in my defense I have some major allergies going on as well!  Sorry about the camera view, I don’t have a webcam on my desktop computer so I had to rig it to tape from my digital camera.  It was hard to read the questions & look at the camera at the same time 🙂
