Veteran’s Day is Wednesday, November 11th this year.  It’s right around the corner.  I know that right after today….the holidays begin and our minds are on constant Thanksgiving/Christmas mode.  It’s easy to forget about Veterans day and it’s something I believe in my heart we need to be sure and acknowledge.

This Veterans day Great Clips is running a promotion honoring our Veterans.  Go get your haircut at any U.S. Great Clips salon on November 11th and share a free haircut card with a veteran you care about.  Veterans you get a free haircut too!  Whether it’s a spouse, parent, grandparent, friend, neighbor, or co-worker.  It’s just a simple way to show the ones who’ve served around us that you care!

I’ll be honoring my Dad and my husband this holiday.  My Dad served 11 years in the Army and my husband almost 6 years in the Air Force.

It’s almost time for the holidays!  It’s only a couple months away and my favorite time of year is kicking off.  Yay!  The food this time of year is also something I wait all year for.  From sweets to savory treats…I love them all!  My favorite meal is dessert and this year I vow not to eat my weight in food.  Fear not… Weight Watchers is here to help you!

One of my favorite treats during the holidays is red velvet cake balls.  I usually make them around this time of year to take to parties or work functions.  I went to my local Walmart and picked up a couple of boxes of the Red Velvet Creme Cakes in the snack cake isle.

Red Velvet (Weight Watchers version) of Red Velvet Cake Balls:

All you need are two boxes of the Red Velvet Creme Cakes and some chocolate dipping sauce.  That’s it!  No need to bake the cake (NO BAKING!!!) or adding icing like you normally would.  Save time and feel healthier at the same time 🙂

The Red Velvet Creme Cakes already have the cream inside to give your cake mix moisture.

Peel off the wrappers and put in a bowl

Mix together until you get a big ball of red velvet goodness

Roll your balls into the size desired.  I got around 16 cake balls from two boxes.

Put in refrigerator for around 30 minutes until firm

Dip in chocolate and top with your favorite sprinkles!

Each cake ball is around 11-12 Weight Watchers points.

You could also make chocolate cake balls with the Weight Watchers Chocolate Creme Cakes.

So, there you have it.  My favorite holiday treat- a lighter version that is!

As a person who has VSP insurance personally I can tell you I highly recommend it and it’s fairly inexpensive.  Checking the box for vision care is less than a couple lattes each month.  I feel safer knowing if anything ever happens to my vision I’m taken care of.  I also get my glasses and contacts covered as well as eye exams every year.  To me it’s worth the little bit of extra cost each month to feel secure.

So, when it comes time for Open Enrollment this year, while you’re checking the box for medical and dental…don’t forget about your baby blues, your chocolate browns, or gorgeous green eyes. They deserve just as much attention as the rest of your body.

Also, ladies, I know when it comes to making decisions, we can tend to procrastinate a bit and sometimes even forget all together!  It’s okay to call your husband and ask what he recommends as well.  In fact he’ll probably like that you value his opinion.

VSP recently asked people to take a poll on open enrollment.  The end result was that most people dread it so much they would rather do most things than answer Open Enrollment questions except for one thing- cleaning a teenager’s bathroom! Ew.

When asked to compare their independent insurance decisions (like auto and home) to Open Enrollment insurance decisions, respondents were more likely to say they’re “more confident” and “more knowledgeable” about their independent decisions than their Open Enrollment decisions.  What are your thoughts on Open Enrollment?  Do you stress about it, or are you happy to have the option to have it?

I personally am a “get things done” kind of person.  When I get that email saying it’s time for Open Enrollment I like to get started.  This way I’m done and I don’t have to think about it anymore.  Whew!

I Mean Really?

Tonight I’m sitting here editing photos and so excited for the fall season to hit us.  I’m waiting patiently Texas…I know you can’t decide.  One day it’s 95 and the next it’s 50.  I’m ready for leaves to change colors and to feel a breeze instead of sweat under my arms.

We put another bid in on a house yesterday.  There are already multiple offers.  I think we are becoming pros at bidding on houses right now.  The market is crazy…we had no idea it was this crazy when we sold our house this past summer.  So, any prayers would be appreciated.  If it’s the Lord’s will then that will be our home, if not I know the right one will come along eventually.

Kids can be so mean.  Connor’s teacher told me that some kids were making fun of him at school because his hair was frizzy/curly.  He does have some crazy hair, but I love his curls.  He usually takes a shower at night and sleeps on it.  By morning it has definitely frizzed out and it’s hard to maintain.  But still- why would that even matter???  I bought a spray bottle today so we can spray it down if it gets out of control.  Anyone recommend any products for frizzy/curly hair for boys?

I am loooooving ponchos this season.  I am not a fashionista, but I do like fashion.  I’m short and I like food too much.  I didn’t inherit one bit of my Mother’s gene pool in the height department because she’s 6 feet tall.  This is from Stitchfix.  You fill out a profile online and a stylist picks out pieces for you.  Overall I’ve really liked what my stylist has chosen for me 🙂

I also bought a Christmas ornament for 2015.  Every year I try to buy an ornament with our yearly photo in it.  One day when I’m old and gray I can look at them all and see how we’ve grown over the years.

Kindergarten homework is so fun!  I can handle the early years…when he gets into high-school he’s all Terence’s 🙂  There seems to be a new flyer, announcement, or to-do every day.  Gosh, some days I forget my deodorant let alone all the different things going on at school.  There is so much STUFF to remember.  How do you organize school stuff?

A few months ago I got to attend a fun even hosted by Walmart called the “Chosen by You Expo“.  I got a sneak peek at toys, electronics, clothing, and all kinds of gifts that will be available this season in Walmart.  I felt like a kid visiting Willy Wonka with all the toys around and I saw a ton of toys I know Connor is going to love too!  I’m going to share with you some of my favorites from the event and give you a head start on what’s HOT this holiday season.

Friday Favorites: A Link Up -School Lunch/Snack Ideas

Yay!  It’s Friday…It’s Friday!!!  HOLLA!  I hope you join in on our weekly link-up.

This week I’ve just wanted to be like this…

But unfortunately it’s been anything BUT.  Our lease is up on our apartment.  We still haven’t found a house.  They are all so expensive…like what do these people DO for a living???  They must all be trust fund babies or they live in mansions empty of furniture and only a futon. I don’t want a 5000 square foot house!  I want half the house for half the cash darn it! AND…I didn’t win Powerball yesterday. I was counting on that $191 million dollar cash payout this week.

Seriously.

I volunteered to help teach Connor’s art class today wish me luck with that.  All I know is that it involves paint.  Gulp.  (Note to self don’t wear anything of value)

SOOOOOOOOO….moving on.  This week’s link up topic is school treats and/or lunch ideas.  I need help with this so bad it’s not even funny.  Connor’s lunch revolves around peanut butter and jelly and turkey and cheese sandwiches.  That’s it.  That’s all I got.

I love doing crafty things and I’m going to try to find something to do this year for Connor’s class too.  It’s the whole lunch situation I struggle with.  After a couple of weeks of school Connor came home and said “Mom…did you know there is another way to eat lunch…it’s called TRAYS”.  I laughed so hard at that!

I asked if he wanted to try a tray and he said no because the food wasn’t what he liked.  I don’t mind packing his lunch, I actually like it.  The question is what to put in it?
