*10 eggs
* 1 C. sharp cheddar
* 1 cup frozen spinach (thawed & drained)
* 1/2 onion (I use the frozen pre-chopped kind)
* 1/2 a link of Hillshire farm smoked turkey sausage cut into cubes

I dumped all this in a bowl and mixed together then poured into a pie pan & baked for around 45 mins at 375 degrees

A great and easy side dish is baby taters.  Just drizzle with olive oil and mix with freeze dried dill & seasoning salt.  Bake at 375 for about 40 mins.

Lately I’ve been trying to enjoy every second of life.  I just feel like time has been moving waaaay too quickly!  We have a good routine down now….. 

OUR DAY:

* Wake Up
* Shower & get ready
* Wake Connor up and feed him
* Pack lunches and haul into the car
* Work until 4, while Connor plays at either his Aunt’s or Granna’s house for the day
* Pick Connor up, head home, cook dinner
* We have been pretty diligent about doing our walks every night around the lake
* Come home watch a few TV shows & then put Connor to bed
* I’ll get online for a bit, Terence will watch TV, or I’ll read in bed

START THE DAY AGAIN!!!

Connor’s such a good kid.  He’s so loving and caring.  He gives kisses all the time, he is such a good sleeper, and loves to read books.  The only thing we have issues with is his eating.  He is still an extremely picky eater.  Some days I wonder if he gets enough to eat?  But I dont’ want to force it and create a fear of food either, so for right now we stick to a few food we know he likes and if he’s hungry he’ll eat!

We also watched Jeff Mauro’s new show Sandwich King on Food Network this past weekend.  He was the winner of Food Network Star.  And let me just say his sandwiches are incredible!
Also on Food Network is Pioneer Woman!  She has a new cooking show and it was so fun to watch and actually see her in action on the ranch!

 In other weekend news:

I love some peanut butter pie.  It’s one of my favorite desserts because it is SO easy to make and tastes SO good!

INGREDIENTS:
1 cup Creamy Peanut Butter, plus 2 tablespoons, divided

1 (8 oz.) package cream cheese, softened

1/2 cup sugar

1 (12 oz.) container (4 1/2 cups) frozen whipped topping
1 prepared chocolate pie crust
DIRECTIONS:
1.BEAT together 1 cup peanut butter, cream cheese and sugar in large bowl with an electric mixer on medium, until well combined. Gently mix in 2 cups whipped topping until thoroughly combined. Spoon mixture into pie shell. Using a spatula, smooth mixture to edges of pie.

2.  Spread whipped cream topping over pie. Refrigerate until set. (I mixed the dark chocolate peanut butter with my whipped cream for a chocolate topping)

First of all I want to say thank you to everyone for all the responses I had on yesterday’s post. I had no idea that so many other people felt that way! I don’t consider myself to be the best writer, so a lot of times it’s hard for me to let my guard down and write how I feel. I just wanted to be honest. I know I’m not perfect, I am a sinner and my life is so far from perfection you have no idea! I have a great life, but some days I do get frazzled, Terence and I do fight, everything is not always sunshine and rainbows! There is only so much people will let you in on a computer screen.

In the end it’s not going to be the “stuff” we have in life…it’s going to be the time and special moments we share with those that matter, so with that said, there is no reason to feel jealousy about anyone else. If you feel like something is not going your way, that is okay! It will get better.  Trust.

So…I am going to live my life and this is my blog & I’m taking ownership of that!

I’ve contemplated doing giveaways from time to time because I have felt judged for it. I don’t do them for me….I love to win free stuff on other blogs and I love to give away stuff too! I’ve always been a big gift giver and it brings me joy to light up someone else’s life in some way. I’m not doing it to gain followers or any of that! It started out as an inside joke with someone to put it there, so I should probably take it down….but it’s my blog so who cares! I may just leave it up 😛

I am aware I have a horrid coffee habit that is equivalent to a crack head.  But I work hard & it’s my treat 😛

Enough venting.

Obviously I’ve been holding a lot in for awhile! And I so enjoy reading about all of your lives, even though I can’t comment because of pop up issues I do read and will comment back via twitter or email if you let me! I am not trying to be rude 🙁
Live your life to the fullest and stop worrying what everyone else around you has or does because in the end it doesn’t freaking matter. That.is.all.

This here is a “hatch chile” It tastes GOOD! Not too hot at all!

We cooked our chicken in a crock pot and shredded

I cheated a bit and bought a lot of the ingredients pre-made

For the topping I mixed sour cream and the hatch chile con queso together 🙂

And because I am being honest and all….
There won’t be any new little Branches running around this house anytime soon. I feel so blessed to have a baby at all when some people are still struggling to have one. We are way cool with our one perfect angel. If we were gonna consider it he’d have to be in kindergarten because I can’t afford two kiddos in daycare & I’m gonna enjoy every.single.second. with my boo boo!
