Pumpkin Cupcakes

Last night I made pumpkin cupcakes with cream cheese icing. My mother in law gave me a great recipe for pumpkin cake and I have been DYING to use these precious cupcake liners that Summer gave me awhile back…..and it looks so cute right?

Cupcake carriers rock!
And they taste like pumpkin pie…I am sure everyone is ready to get their eat on for next week!
RECIPE

Ingredients
2 c. sugar
4 eggs
1/2 c. oil
2 1/2 c. flour
1 T. cinnamon
1 t. salt
2 t. baking soda
1 16 oz. can of pumpkin
Directions
Mix sugar, eggs, and oil; combine flour and dry ingredients a little at a time. Add pumpkin last. Bake at 350 degrees for 40 minutes in a 9″ 13″ pan….but I obviously did cupcakes.
Frost with Cream Cheese Frosting

  1. Oh I want one of those carriers. I hate traveling with cupcakes – they get so messy. That would be perfect!!!

  4. These look delicious! Perfect timing, too. My birthday is on Wednesday and my students asked if I’d bring in cupcakes. Normally, I don’t condone giving 8-year-olds sugary treats the day before a holiday, but I think I just may bake these for them! Happy Thanksgiving!!
