Pumpkin Cupcakes

Last night I made pumpkin cupcakes with cream cheese icing. My mother in law gave me a great recipe for pumpkin cake and I have been DYING to use these precious cupcake liners that Summer gave me awhile back…..and it looks so cute right?

Cupcake carriers rock!
And they taste like pumpkin pie…I am sure everyone is ready to get their eat on for next week!
RECIPE

Ingredients
2 c. sugar
4 eggs
1/2 c. oil
2 1/2 c. flour
1 T. cinnamon
1 t. salt
2 t. baking soda
1 16 oz. can of pumpkin
Directions
Mix sugar, eggs, and oil; combine flour and dry ingredients a little at a time. Add pumpkin last. Bake at 350 degrees for 40 minutes in a 9″ 13″ pan….but I obviously did cupcakes.

  1. WOW – those look SO YUMMY and I love the cupcake liners that Sum Sum sent you – thanks for the recipe – I will be making these oh so soon! :o) xoxoxo

  2. THANK YOU SO MUCH for sharing this recipe! They look so tasty!! I love the cupcake liners–they’re so cool! I can’t wait to make these treats. I work at a school, so I think I’ll make a batch and take them in for my co-workers to enjoy too!!

  3. These look delicious! Perfect timing, too. My birthday is on Wednesday and my students asked if I’d bring in cupcakes. Normally, I don’t condone giving 8-year-olds sugary treats the day before a holiday, but I think I just may bake these for them! Happy Thanksgiving!!
